Summer Vedge Pizza
This pizza is simple. Its fresh and tasty - full of seasonal vegetables. I love to use Trader Joe's pre-made pizza dough. It comes in a plastic bag and it cost like a dollar!! Let's be honest, that's what makes this so simple.
I keep mine in the freezer after stocking up at the store until ready to use. I thaw it on the counter during the day and it's ready to go at dinner time. I usually make marinara sauce from this recipe, but today I didn't have time (because someone was keeping me at the splash pad) so I just used jarred pizza sauce - still yummy! I think I might go have a midnight snack - there are leftovers in the fridge calling my name...

Summer Vedge Pizza
1 pre-made pizza dough - split into four's or 1 large pie
1/2 -3/4 c pizza sauce - depending on how sauce-y you like it
1-2 cups Seasonal Vegetables - here I used diced zucchini and chopped cherry tomatoes
1/4 c. chopped kalamata olives
1 1/2 c. mozzarella cheese
1/4 c. parmigiana reggiano
3-4 leaves fresh torn basil
Salt and Pepper to taste
Cornmeal for dusting
Preheat oven to 425 degrees. Place rolled pizza dough on large cookie sheet dusted with cornmeal. Spread pizza sauce evenly over pizza dough. Sprinkle parmigiana and mozzarella over sauce. Place vegetables and olives over cheese, season to taste with S&P. Bake for 10-12 minutes and broil to achieve desire doneness, approximately 1-2 minutes more. Sprinkle torn basil on top of hot pizza. Serve in wedges.
